I love all things banana.  Also, anything tropical.  Good thing I’m Mexican!  Or maybe it’s BECAUSE I’m Mexican.  My mother used to make us breakfast smoothies  before there were smoothies, and sometimes she would add a banana.  Except they were called “ponches”. It was just milk, sugar, vanilla and a raw egg for protein.  Yep!  Still okay.  Still around after downing raw eggs all my life.

Sorry, I digress.  When I saw the post for the Best Banana Cake with Vanilla Frosting on my friend, Danelle’s Let’s Dish blog, I knew I had to try it.  If you don’t care for coconut, check out her recipe.  I love the tropical flavors here.  Also, I only had 1/2 cup of sour cream on hand, so I substituted vanilla Greek yogurt for the rest.  This cake was so moist and flavorful, I couldn’t stop eating it  Don’t judge me…I’m a work in progress.
I challenge you not to fall in love with this cake.  You’ll understand.

Best Banana Cake with Coconut Frosting

  • Cake
  • 1-1/3 cups granulated sugar
  • 1 cup sour cream
  • 2 eggs
  • ¼ cup unsalted butter, softened
  • 1-1/2 cups mashed ripe bananas (about 4 bananas)
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • Frosting
  • ¼ cup unsalted butter, softened
  • ½ cup heavy cream
  • 1 teaspoon coconut extract
  • 1-1/2 cups confectioner's sugar
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, cream together sugar, sour cream, eggs, and ¼ cup softened butter.
  3. Stir in mashed bananas and 2 teaspoons vanilla extract.
  4. Add the flour, salt, and baking soda. Mix well.
  5. Pour batter into a greased 9x13 inch pan. Bake about 25 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
  6. To make the frosting, beat the ¼ cup softened butter and confectioner's sugar together until smooth.
  7. Slowly add the heavy cream and mix until smooth. If you like your frosting a little stiffer, simply hold back on a little of the cream. Stir in the coconut extract.
  8. Spread frosting over cooled cake.
