Strawberry Cheesecake Bites

I found this Valentine’s Day idea in a Good Housekeeping magazine.  I was looking for an easy Valentine’s Day treat for the masses.  This was perfect!  Everyone at work got a piece and it didn’t break the bank.  The honey glaze was a unique idea and such a sweet addition.  If your work has less than 50 people, share this with your neighbors, too.  They will love you for it!

Strawberry Cheesecake Bites

  • Graham Cracker Crust
  • 2 graham cracker crumbs (about 30 crackers)
  • 1 Tablespoon sugar
  • ½ teaspoon cinnamon
  • 4 Tablespoons melted butter
  • Cheesecake Filling
  • 4 8-oz. pkgs. cream cheese, softened
  • 1-1/4 Cups sugar
  • ¼ Cup flour
  • 3 eggs, room temperature
  • 1 Tablespoon vanilla
  • ½ Cup sour cream
  • Sour Cream Honey Topping
  • 1-1/2 Cups sour cream
  • ¼ Cup honey
  • 1 teaspoon vanilla
  • Sliced fresh strawberries
  1. Preheat oven to 325 degrees F.
  2. Line a 13x9x2 inch pan with heavy duty foil, leaving 1 inch of foil hanging over edges of pan; set aside.
  3. For crust, combine crumbs, 1 Tablespoon sugar and cinnamon in a medium bowl. Stir in melted butter until combined. Press crumb mixture into bottom of prepared pan.
  4. For cheesecake filling, in a very large bowl, beat cream cheese and sugar with an electric mixer on medium-high speed until fluffly. Beat in flour until combined. Add eggs and vanilla; beat on low speed until combined. Stir in sour cream. Pour filling into crust-lined pan. Bake 40 minutes.
  5. For sour cream honey topping, in a medium bowl, stir together sour cream, honey and vanilla. Remove cheesecake from oven. Spread sour cream mixture over cheesecake. Bake 10 minutes more. Cool in pan on a wire rack for 1 hour. Cover; chill at least 4 hours.
  6. Use foil to lift uncut bars from pan. Cut into small squares, about 54 bites. Top each square with a strawberry slice. If desired, drizzle with honey.
